450g/1lb mixed Mediterranean-style vegetables (peppers, courgettes, tomatoes, red onions, anything really!)
6 slices (approx 175g/6oz) bread
25g/1oz butter
3 eggs
400ml/14fl oz milk
25g/1oz hard cheese


  1. Preheat the oven to 180C/350F. Butter the bread and arrange it in the base of a deep oven dish.
  2. Trim and chop the vegetables into bite-sized pieces. Spread them over the bread in the dish.
  3. Whisk the eggs and milk together and pour over the dish. Grate the cheese and sprinkle it on top. Bake for 20 minutes until puffy and golden.
