Makes 3-4 pancakes

Ingredients:


1 ripe banana
3 tbsp plain flour
1 tsp baking powder
3 tsp desiccated coconut
2 tsp sugar
1 dash of vanilla essence
1 egg
1 dollop of greek yogurt
Dice tinned or fresh pineapple

Method:

  1. Mash up the ripe banana with a fork.
  2. When nice and smooth add the sugar, vanilla essence and the egg and mix it till light and fluffy. 
  3. Add the flour and baking powder until well mixed and add the coconut to the mix. 
  4. Pour a bit of the mix in a medium heated greased pan and turn it over when ready.  
  5. Put some greek yogurt on top with diced pineapple.
