Ingredients:

Pancake recipe:
100g plain flour
2x whole eggs
300ml milk
3g salt
10g sugar

Honey syrup:
100g butter
200g runny honey (I have used our Babylon roof gardens honey)
50g pistachios roughly chopped

Method:


Pancakes:

  1. Whisk eggs and milk together.
  2. Add the salt and sugar to sieved flour.
  3. Combine the wet ingredients with the dry slowly until a smooth batter is formed.
  4. Heat the pan over a moderate heat, and then wipe it with oiled kitchen paper.  Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer.
  5. When the pancake is golden brown turn the pancake over, once golden on both sides turn onto a plate. (Don’t worry about keeping them warm at this point they will be cooked in the oven with the syrup.)
  6. About six pancakes are needed for the baklava layers.

Syrup:

  1. Melt butter in a pan and add the honey, as it starts to simmer remove from heat.
  2. Using a frying pan with a metal handle or an oven proof dish start to layer the pancakes with a small amount of the honey syrup and pistachios between each layer.
  3. Place the dish or frying pan in the oven for approximately 7-10mins on 180 c. 
  4. Remove from oven and leave to cool for a few minutes.
